3 Sheeps’ new brewery opens for tours (WI)

“3 Sheeps has been refurbishing the 40,000-square-foot facility over the last year, which will give the company the ability to produce 200 barrels of beer a day — up significantly from the 28 barrels a day they could produce at their old site at Hops Haven.

The brewmasters have begun shifting production to the new facility, but are doing one brew at a time to ensure consistency in flavor as they shift to the newer equipment.

“Our old adage is: It’s easy to make a good beer once. Now make it again.” Pauly said. “That’s really the hardest part of craft beer. We do such small batches that to get that consistency and repeatability is difficult.””
